Anthony Bourdain recommended the Global G-2. They’re affordable and pretty cool looking, but I don’t really know what else is out there. I use a Tramontina chef’s knife.

I get the impression that Global knives aren't that popular in Western countries

Makes sense. I personally wouldnt pah MSRP for a global. I bought a 3 piece set for 110 USD on the official global store including the G-2, GS-5, and GS-61. I thought 36 USD per knife seemed very reasonable.
