Recommendation for 65% keyboard
Yunzii AL65 or AL68 XVX MU68 is wood. Whatever you get, get silent switches and swap them out, don't waste time looking for the mythical decent affordable silent prebuilt.

Redragon K715 Pro Issue
OK, that's weird that it was in the file named "user guide" and not the file named "software". BTW, your problem is not unusual. My Yunzii AL68 is QMK and has a rotary encoder but there's no support for configuring it in the firmware.

What are some good 75% barebones? (or prebuilt but easily moddable)
i bought the capybara switches and they were honestly lack luster. i put them in a yunzii AL68 and they sounded quieter than the stock gaterons that came with it and less thocky too.

Help me choose a keycap set (please)
Nice QMK/VIA board. Probably actually QMK, since it's Yunzii. Also probably be months before the source code shows up, to judge how long it took for the Yunzii AL68. That third one says it's XDA profile, but it's not. XDA is a uniform profile with all the keys the same height. That's OEM or Cherry,
