Disclaimer: I tend to avoid keyboards with screens because they're mostly just another thing to break. The K719 is one of the least bad legacy Redragon boards. The screen is sorta functional and you can set the screen's clock using the knob which makes it not purely useless, but I prefer tapping on

Redragon K715 Pro Issue
OK, that's weird that it was in the file named "user guide" and not the file named "software". BTW, your problem is not unusual. My Yunzii AL68 is QMK and has a rotary encoder but there's no support for configuring it in the firmware.

i'm debating on which keyboard i'm gonna buy for school
The pop keys is almost certainly worse, but there are better keyboard for the money, anyway. Check out the Yunzii AL68 or B87(AL is aluminium, which might be a bit heavy, but the B87 is plastic. Better for portability). Both support QMK/VIA customisation, which is a must-have these days IMO.

Rainy75 or Mchose G75?
I think the AL65 is just it's own thing, it released after the AL68 so if i had to guess it's just an alternative for those who don't need a knob :p Still has QMK and the newer yunzii switches, I was gonna buy it originally cuz it looks really slick but the AL68 was cheaper

I honestly really recommend QMK/VIA, I also went from basically a membrane keyboard to an AL68 with QMK/VIA, and as a programmer and gamer I've been able to use it for many shortcuts and just to customize my keyboard as much as I want Plus it gives me trust that yunzii could like literally disappear

Budget Gaming Keyboards
I would recommend the Yunzii AL65 or AL68. The AL66 is an older board with legacy firmware. None of these have magnetic keys, though. The best option I can see right now with magnetic keys would be the Keychron J8 or J2 HE for $100 on Amazon US. The J8 is a more solid board, but is styled after the
