Is it better to shoot with a higher ISO, or use lower ISO and raise the exposure in post-production?

12800 ISO on the Sony FX3 is a native ISO so if you're in a low-light situation it's probably best to use 12,800. And then in post can adjust exposure some more if you have to. Personally if 12,800 is still too dark overall you might want to start adding some lights to the scene.

If I’m not mistaken, the FX3 is still one of the most popular cameras on the market (in the top 5 on Amazon, I believe) - so, sure. Maybe there’s cheaper (better? Up to you!) alternatives around, but until Sony releases the mark 2, or something else drastic happens, I would imagine the price staying

Which rig would allow me to get “The Office” style zooms while filming?

I was eyeing on RED V Raptor XE but then I saw FujiFilm Eterna

Sony FX3/FX6 or Canon C50/C80/C400. Travelling with bigger cameras, especially those that require a bit of putting together, is a pain in the ass. Not impossible, of course, but having done a bit of travel work (and shot many music videos that could easily have been shot on an FX3 with no compromise

Need camera recommendations for better low light professional quality.

Sony ZV-E1. You can buy used ones for less than $1500. Camera has the same low light sensor as the A7Siii/fx3.
