New to cameras, thoughts on Sony a7S II Mirrorless Camera?

I've done a few weddings with the a7sii and oh my god, I hate it. The rolling shutter is awful and the autofocus was so whack, and I was using native Sony lenses. For hobby and beginner type stuff, maybe you can make it work, down the line you can sell the body and buy a better one

I keep seeing ads for Imagen-ai has anyone used it for color correcting?

I don't recommend the A7SII since it only shoots 8-bit 4:2:0. You’ll want a camera that supports 4K 4:2:2 10-bit for much better color grading in post.
