Should I get the Sony a6600 or a6700 as my first camera?

The 55-210 isn’t a good lens, I’d avoid that tbh. The 18-300 isn’t exceptional either but considering it’s a superzoom lens it’s more forgivable. Will the sony 200-600 work well with the a6000?

If you're budget, it should work. Otherwise get A6700 at least, better processor and focusing. I have A6600, it is old for Bird Photography.
