What keyboard should I buy?
Definitely not Nuphy. Nuphy has 3.0mm to 3.6mm key travel, thats basically regular MX keys. Lofree Lite100 is probably your best option. 2.8mm total travel stock switch, shortest of any prebuilt available. Shine thru keys, fairly quiet. Hot swappable. If you want shorter travel keys check out Kailh

The only thing I can't come up with is a fullsize keyboard with no battery at all. You know you could always just remove the battery. In that case, I'd suggest, maybe, the Satechi SM3. Mac Mini Buying Guide
I just bought the Satechi SM3 Mechanical Keyboard for Mac with my Mac Mini M4 and absolutely love it! Only had it a few days, but wow! I connected directly via Bluetooth, but it has a dongle and can also be wired. It comes set up for Mac, but has extra keys for Windows. Set up was a breeze.

Is there any way to keep the light of my MX Mechanical on while connected via BT? I'd love to just dim the light instead of turning it off every few seconds.

Looking for mechanical keyboard to match Apple setup
I second the Lofree Flow 2 100! It is amazing. If you don't need something hot-swappable and you really need the 100% 108 key, consider the Satechi SM3 in black, although the keys are a two-tone some-black-some-gray...
