As big as you can afford. I use a 12.4" Galaxy Tab S8+, and if there are any good sales on the next level up Ultra tabs I'm totally upgrading. The iPad's 2:3 aspect ratio is best for modern tablets, but I'd personally rather not be in Apple's ecosystem.
