I have the same mouse, Viper V3 Pro ( also have the Razer Basilisk V3 Pro 35k Wireless ) and it's working 100%, haven't had a single problem with it since I bought it approx 2 years ago. Used daily for about 8-10 hours per day. Just to troubleshoot this issue, have you tried updating the firmware?

I was fortunate with that. Used the MX 3, MX 3s and now Razer Basilisk V3 Pro for 4 months. No issues with the coating what so ever. Maybe I didn't keep them long enough to encounter that problem.

Ngl my blackwidow v4 75% lasted for a year (since I bought it) without any problem. The same goes for my basilisk V3 pro except for bluetooth issues sometimes.
