Which e-ink tablet for notes that I can sync to my laptop? Or iPad Mini?
I would suggest the Penstar eNote Pro. It's a great color eInk device. It supports OneNote note syncing. You can check it out to see if it fits your needs.

Omg thank you for making the eWritable Comparison table! That said, I'd like to know which tablet has the most intuitive UI (easy to navigate and use) and also has the longest software support? Bought the eNote Pro by Penstar but the software is quite unintuitive.

Highest contrast eink on the market?
Viwoods Aipaper and Penstar eNote have the whitest screens. Penstar doesn't have a touchscreen, you have to use a stylus and button to navigate. They are still light grey, no genuinely white e-ink screen exists.

Take a look at the Penstar eNote 2. It is a B/W device with a super white screen. It is also a pen-only device, so it takes a little time to get used to it, but it's very good once you do.
