I think I’m finally ready to buy my first real camera. I’d love your advice.
1500€ just for the camera or for the whole package? Batteries, media, lenses? I would suggest used Blackmagic Pocket 4K (dual native iso with usable 3200 for low light)/Pocket 6K with EF mount/Panasonic GH4, 5 or 5s maybe with manual lenses. BRAND NEW to photography
An older Panasonic gh4, gh3, gh2, g6 or g5 may well be in your price range. All interchangable lens mirrorless m43 so lots of reasonbly priced lenses also.

Random photos with Panasonic GH4 and a couple of lenses
I also own a Panasonic GF1 and to my surprise all the Canon lenses I tested with it and this same adapter worked perfectly! From what I've read about the EF-M1 here and on YouTube, only way to find out what works is just to test it. On GH4, only the EF-S 24mm f2.8 works most reliably. The AF works,
