Wear OS watches already DO. It's up to the maker to allow it. OPW3 is infamous for having an automatic LITE mode were wearOS is disabled you can make it even more lite.Samsung Watches have WATCH-only mode, and watch 7 has Kids mode which will not need a phone again... Only pixel Does not.

Had both, 100% OPW3! Battery life is pretty much the same (at least for my usage pattern) but building quality is so much better! TW glass was scratched within a couple weeks, OPW3 is till absolutely perfect after months! If you ask me, the OPW3 is the best watch you can buy as of today.
