I got a Steam Deck recently and I'm looking for a wireless keyboard so I can travel with it as well as do some non-controller gaming on the couch. Elsewhere the NuPhy Air75 V3 is highly recommended, but it seems like the brand is reviled here due to quality control issues. What are some alternatives

The same issue is present on Air75 V3. The best course of action I'd recommend is for you to return the board and buy from a different brand (Keychron/IQUNIX/Lofree etc.).
