Best to invest in a commercial grinder. If you plan to just brew batch brews (which is weird way for a Michelin restaurant) best to get single dose grinder like the Mahlkonig SD64 or if the budget is forgiving, an EK43. Thats exactly it…just like x54 or e64 these are also produced in China by HeyCafe as opposed to Germany like a traditional Mahlkonig…its sad to see people have such experience with “Mahlkonig” you would expect a premium from such a brand

Given budget, what espresso machine/grinder would you put together? [$4000]
Profitec RIDE or MOVE depending on if you want an e61 group or not. Then I’d get mahlkonig x64 if you like single dosing or x54 if you want a hopper.

IMS precision basket w/ light roast — dialing in is hard
Yep, I actually just got a light roast ethiopia. Perhaps adjust the grinding in smaller increments. Or, keep the grind the same, but reduce the quantity in the basket (e.g 16g). For my coffee, I noticed it’s fairly ok with this receipe: 16g in, 32-33g out, 23-34s. I’m using a 16g basket and the grin

Noobie needs help
I live in Melbourne Australia, where we typically have very high quality coffee. I have a gaggia and just got a mahlkonig x54 grinder. I just finished drinking my coffee then whilst thinking how bloody good it is that I can have this high quality coffee at home.
