Buy the Logitech MX Mechanical Mini. It's fantastic. Portable enough to carry in a bag. I have a Surface Pro 8 and am also very much a keyboard snob. The Surface Pro keyboard is pretty solid, all things considered.

I have the MX Keys Mini TKL and MX Mechanical Mini. Both are amazing keyboards but I always seem to rotate back to the MX Keys Mini TKL. The feel of the keys and being light (for me) is very good. My hope would be that they fix the size/spacing or whatever is non-standard so 3rd party keycaps are compatible.
