If you are not able to go down the mesh route, take a look at the Linksys EA9500 router which you can get on eBay for £50. It's an absolute beast of a router, one of the most powerful routers you can get.

Logging in to linksysinfo.org gets me kicked out
I'm the author of the thread, the Linksys EA9500 is way more common than the EA9400 but are nearly identical, the only difference is the EA9500 using a BCM4366C0, while the EA9400 uses a BCM4366B1, other than that, both routers are so similar that you can run the EA9500 build of OpenWRT on the EA940

Logging in to linksysinfo.org gets me kicked out
I know this probably sounds really stupid, but I managed to get Claude to make a working freshtomato port, it boots, but running "nvram commit" crashes the router, and the Wi-Fi radios don't work yet. Weird transcoding
OK, so I think I solved the remote access issues. My router was apparently too old to work with Plex correctly. I was using a Linksys WRT1900AC and have switched to a Linksys EA9500. Remote Access has been rock solid since the change and I am seeing good connections.

The spinning admin page on your EA9500 while it still functions as an AP suggests a firmware or interface issue; a factory reset is generally safe but will erase settings, so try clearing browser cache, using another browser, or accessing via Linksys Cloud Manager before resetting.
