What a spacious case to build in! (pardon my light strips... not sure if they should stay or not, kind of looks tacky). Can't quite get the RGB to look white other than the ram sticks which are the only ones that look white... any tips do let me know!

Your budget allows for a very nice PC. For the CPU I picked the 9800X3D which is one of the best gaming CPUs. The only CPU that's better is the 9850X3D, but it's only by a few frames and simply isn't worth it for the price difference. For RAM, there's not much to it, it's just the cheapest 32gb kit

You’re paying a large premium in most components for no benefit. You mention only doing hobby editing - the 64GB is more than needed. The system will run fine as is. Still, you can cut €300 out of your list without any change to performance, and actually some better aesthetics. Changes: Motherboard: The B850 Tomahawk will do the same for less cost. Memory: Little benefit to paying that much more for slightly lower latency. X3D CPU

Thoughts: A $5000 build should not have a 5070 Ti; you can build that for half the budget. Needing back-connect motherboards severely limits your choices, which means very poor value. You can achieve a unified aRGB system by using components that use the motherboard standardized 3-pin aRGB headers.
