My brother Really good hand grinders exist. I have a kingrinder k6 and it grinds perfectly for literally every type of coffee. You can get a great manual grinder and not break the bank. That being said, if you care about freshness, youre better off going with a manual grinder, a small digital scale

How do you start getting into better coffee without going overboard?

Best starter espresso machine [$500]
Breville Bambino ($300) +DF54 ($230) = $530. Slightly over budget but worth it. Skip the Plus. He doesn't need automatic milk frothing unless he drinks lattes daily. DF54 is the best grinder for the money. Flat burrs, low retention, no drama. If $530 is too much, get Kingrinder K6 ($100) manual grin

I am happy with my <$1000 setup and don't want to upgrade!
mine is a £480 set up: bambino plus and kingrinder k6. and maybe £80 in accessories like wdt, brush, self leveling tamp, scales, naked portafilter. so £560 altogether. yes the hand grinding is a bit much sometimes when doing light roast. but me and my partner get so excited by coffee i make everyday

looking for an espresso machine to buy my boyfriend for christmas/his birthday [max $200]

Not necessarily. Electric grinders are definitely more efficient but there are plenty of hand grinders that perform comparably to more expensive electric counterparts. KinGrinder K6 works great for espresso
