What does this warning mean?
I mean, it ran fairly well on my HP Envy x360, which can’t even smoothly run a video editor, so the developers are pretty considerate of weaker builds.

Best option $500 or below?
My best recommendation would be to look at used markets. Perhaps Ryzen 5 5500U or 5600U laptops like the Lenovo IdeaPad 5 or HP Envy x360? Those easily meet the requirement of 16GB of RAM and the integrated graphics are more than capable of light editing and gaming. Lucky you may find something like

Are the recommended specs overkill for engineering?
I don't disagree, but those things cost money. I didn't have the $$ to buy a nice PC when I started college. Just giving OP an idea of what a previous student did. Screen just popped after a 360 rotation
I agree that opening and closing should be avoided. Definitely don’t switch to tablet mode. I had something similar happen to my old HP Envy x360 except it happened while I was rotating. is my battery expanded?
That's not where the battery should be, the battery is in the front under the trackpad. HP laptops tend to have the lower lid snap out of their place. Push it in and it should look normal again. Happens often with my Envy X360.
