Best beginner fighting sticks?
Diamond 1 on pad is already solid, so I wouldn’t assume you’re losing just because other people are on stick. A fight stick can be more fun and make motions feel more natural for some people, but there’s still a learning curve. For PS5 beginner options I’d mainly look at Qanba Drone 2 or Hori Fighti

Any good arcade sticks for the ps5?
There's a good selection for current gen but you gotta remember that retail/officially licensed peripherals are usually one console (and backwards compatible) + PC in terms of compatibility. Because of the growing trend of leverless/all button styled controllers, it's pretty split to even selection

What do you game on PS1, NES, Commodore 64? Compatibility is something to consider when making recommendations. Edit: If gaming on PC, look at the fightbox offerings. Hori Fighting Stick alpha is my recommendation for PS5.

Noob friendly fight stick for the ps5
For PS5, I’d say Qanba Drone 2 if you want a cheaper beginner option, or Hori Fighting Stick Alpha if you can spend a bit more and want something better long term. Both work on PS5 natively. Do Screw-In buttons fit in a Hori Alpha
My Hori fighting stick alpha has eight 30mm Seimitsu PS-14-KN and two 24mm Seimitsu PS-14-DNK (the option buttons) installed. It's close, but they fit. I don't think there is a screw-in version of PS-15.
