Beginner home set-up advice [~$1000 max]

Tried to build the ultimate mid-budget setup... What would you change?
I would not consider Fellow Stagg at $200 mid budget. There are lots of quality electric gooseneck kettle for less than $100 I would change out the Maestri scale for either Ikape or Muvna.
