Difference in Fuijifilm look: X100V or xT30iii with 23mm f2.8 setup?
The X100V doesn’t have a “look.” The “look” you are talking about is Fuji’s Film Simulations and that’s available on all Fujifilm X cameras. F2.8 will give you less bokeh than f2 but not significantly, IMO. In your case, there’s a €300 different between the two options. If you go the X-T30 III route

Fujifilm xm5 or xt30iii
I bought xt30 iii two weeks ago. My very first camera. I was looking for a camera na minimal to no post editing required and tingin ko Fujifilm yung perfect brand for that. XT30II or X100V
I believe the biggest difference is a new processor so slightly better AF, I'll still sometimes switch to MF if I need to. Also, the III has a couple more film simulations. I'm not sure where you live but MPB has the III for about $1000 USD as Like-New Used which is about $200-300 cheaper than new.
