X-S 20 with pancake prime is pocketable. I have an x-s10. I find it small enough to carry in my hand on 4+mile walks. It has the Image Quality for what you want to do. Fujifilm upside is so many inexpensive small and light lens.

Fujifilm X-S10 shoots 4K 8bit f-log. It should be around 500-600$ on MPB. It's tiny and a joy to use and does excellent photos as well. Used it for a year for my experimental film before upgrading to the X-S20 which does 6.2k 10bit for 1000€.
