I would go for the X-T3. For the things you're interested in photographing, you don't really need fast autofocus. I really like the film simulations on my X-S10. If you don't want to post process, definitely go for a Fujifilm.

I find the X-S10 and X-S20 so undervalued on the used market. Yes they don't have the mojo of other Fujifilm cameras - no vintage aesthetic, no dedicated top dial - but they are really great cameras and are a good choice for video production imo thanks to the rotating screen.
