Gasket flex is pretty much nonexistent on most HE boards because of a few factors: hard plates, standoffs between plate and pcb, case foams stacked quite densely, so there is not a lot of room to sink in. Can't really comment on SU66 since I haven't tried it personally, but the SU75 case is definite

Keychron J8 HE 8K - We have Wooting at home?????

MG75v2 is quite good but the software is a bit worse. Irok didn't use Sparklink, it's their first board using their own software and MCU I think. Missing some features like profile switching hotkeys etc. Top tier 75%. MG75max is very nice, just uses sparklink web driver and it's very good price/perf

Please help: SU75 PRO vs IROK MG75 MAX vs WEIKAV EG75

I have both SU75PRO and EG75, and would say both are really solid. I'd choose whichever case design you prefer. If you don’t mind Aliexpress, I’d recommend Weikav K-ONE 80 (Hejin switches) or Everglide SU75PRO (Siren switches). I won’t pay 200+ for a plastic board.

Attack Shark R85 HE vs. Redragon K687 HE

If you don't mind using Ali, I'd probably get Irok MG75MAX for under 100EUR. Not sure how good their new switches are, but purely quality, hardware and sowftware wise it's definitely a good option. If you can go up to ~120EUR (135EUR - 15 EUR coupon), I'd also recommend Everglide SU75PRO.
