Short answer - grind quality absolutely affects taste. What’s your budget ? A technovorm moccamaster and a Baratza encore is a great set up. Yes better to keep brewer and grinder separate - both for drip coffee and espresso.

Are burr grinders that necessary?
A burr grinder compared to a blade is like drinking coffee in HD. I grind enough for 1 cup at a time in my Baratza Encore. It has a big hopper, but you don’t store beans there.
