It's the ASUS router. I had the same issue when I had my XT8 mesh routers. It would work like shit. When I changed to an enterprise solution, even if it was slower, it just worked flawlessly. Asus routers just do some bullshit.

How on earth do I get them to listen to me?

I ended up feeling a new router (Asus RT-BE92U) capable of 10Gbps on the WAN port. My previous router (Asus ZenWiFi XT8) has s 2.5Gbps WAN port but I could only get 940Mbps with it, despite the 2Gbps upgrade.
