Yep so seems you need to take the Apple Watch to an Apple Store and/or buy a new phone. I will say not all are upgraded, I just bought a new Apple Watch Series 10, and it was still on WatchOS 18.

I’ve just got rid of my Apple Watch S10 and got the Coros 4, got it on Wednesday and battery at 89%, weird feeling not having to charge it every day! Can’t wait to test it properly on a marathon training run tomorrow

Unpair then re-pair the watch. In the watch app on the phone choose General -> Reset -> Erase Apple Watch Content and Settings Then pair the watch and restore it from the latest backup. This makes unlock watch with iPhone quick again. Also fixes heart rate monitoring when that gets slow/stuck. Weird
