controller rec for mister
Easiest recommendation would be the 8bitdo arcade stick. Great battery life, wireless, low lag, and quite decent stock buttons and stick.

Fight Sticks/Arcade Sticks
The 8bitdo Arcade Stick (the grey Switch Version with red buttons) works perfect wireless in X-Mode. I really enjoy it on my VS. The X-Box Version of this stick doesn‘t work on Evercade.

Best Controllers for different MiSTer cores
Chuck in the 8bitdo NeoGeo controller. It's a beauty. Also the 8bitdo Arcade Stick is a must buy. I personally can't be bothered with SNAC. You get a tiny tiny bit less lag on old, degraded, and potentially less reliable controllers. I would prefer to use usb cable connections on 8bitdo controllers

From your list I've tried the retrobit Saturn Controller (wireless) and the 8bitdo arcade stick. 8bitdo Stick is a much higher quality product and the convenience of wireless is great for couch sessions or guest setups. Downside is it's a bit harder to mod yourself but people have done it and there

How’s this for a mini arcade?
Given the small size of this thing (it's ~1 ft wide) it would be better to get some 8bitdo arcade sticks and plug them in via USB or even just use bluetooth.

Which arcade sticks work with the dock? Just the single 8BitDo one?
I have the 8bitdo Arcade stick the one that works with PC and the Switch. It works great with the Analogue Pocket Dock. I can connect no problem via Bluetooth and use the Use dongle 2.4GHz no problem. I have a Hori Stick fro PS4 that works no problem. I have Neo Geo X Stick connects USB no problem.

Smaller fight stick to get?
I seem to say this way to often, but the 8bitdo Arcade stick is not bad and isn't all that large. I'm starting to feel like too much of a fan boy with this thing, but for a cheap $60 on sale stick you can't beat it. The battery lasts, its BT, wired, and 2.4ghz dongle capable, you can easily upgrade

Hori Alpha or Razer Panthera
In the $150 range there a a huge amount of choices for new sticks even, for something portable, easy to mod, and occasionally wireless go with the 8bitdo arcade stick. For corded only Quanba makes more than a few in that range with Sanwa parts, Mayflash makes the F500-700 series in that price range
