Sweden: Looking for a durable chef’s kn’fe for my grandmother, budget 1,500 SEK/$157. Her current knives are dull and chipped. She has osteoporosis but good grip strength, so I want something balanced, controlled, not too heavy, and durable.

I'm happy with my Victorinox Fibrox 20 cm (8 inch) chef knife. And it's just 1/3 of your budget. Model number 5.2062.20

Knives help

honestly you don't need a set at all. just get one good 8-inch chef's knife and you can do like 90% of what you'll ever need in a kitchen. Victorinox Fibrox is the one i always point people to, it's under $50 and holds up really well. once you have that down the road you can add a paring knife and a

Knife advice

Don't buy a set. Buy an 8 inch Victorinox chefs knife and have change left over for a paring knife and boning knife. $200 is cheap for a set, and you'll have a whole bunch of cheap knives that will never get used, and a couple that will

First knife set recommendations?

I would start with an 8 inch victorinox chef knife, and a cheap paring knife. The Victorinox will probably last for like 40 years.

Durable chef’s knife for my grandmother — budget around $157

Victorinox Fibrox are fairly indestructible, easily in your budget, available worldwide, and while the handles are not pretty they are pretty grippy. Fairly light for a western knife as well. So I think the Pro Chef 8 inch would tick most of your boxes.

They’re not perfect, but I’m happy with how they turned out.

Yeah you’re right, the Yanagis and similar can go crazy long, western slicers are often shorter (16 cm blade length, I think that’s 7"? some are 20 cm/8"). True I get why most knife enthusiasts are focusing on japanese blades, as they aren’t only more affordable but also the availability is way bett

Advice on Proposed Upgrades?

First thing to ditch are the Amazon basic stones ! Buy one good low grit stone instead like a Shapton pro 1000 or rockstar 500. Then keep the victorinox, buy a Tojiro classic 8 inch to go with it. Ditch the plastic cutting board and buy decent but cheap one made in beech. Seems like you have all you

Help for a beginner

This video shows some popular 1000 grit stones, along with the Chosera 400, and how they vary in scratch pattern and finished edge. https://www.youtube.com/watch?v=7phkBKET0xI As far as knives, the Takamura SG2 170 Santoku is a great cutting ultra thin laser.
