I dont think there's any premium knob keyboards out there in a 75% form factor. You could try the Keychron Q1 or the Yunzii AL66 or AL80, or the Womier SK75.

I underestimated mechanical keyboards.
I’ve just made this transition, going from a low-profile Keychron K3 to a Yunzii AL80. It’s a transition, for sure. Keychron K10 HE, AULA F99 PRO (96%), dont have any others in mind, you could also get the YUNZII AL80 which is 100$ and 80%, and get a secondary numpad for like 50$ Keychron V0 Ultra
