They'll have screens that will be easier on eyes than iPad or Galaxy tab, though not as eink, though the content will be better visually and you won't torture your wink

I use an xppen magic notepad. I like to take handwritten notes in one note and there is no lag and it's reasonably priced. I had an older Boox and it lagged. Maybe they have fixed that now. Interesting point... hadn't really considered the aspect ratio. there are some tablets that advertise themselves as being eye friendly (though not the same as e eink, as yeah colour e ink is not as vibrant as tablets). try something like XPPEN magic notepad perhaps? I have not tried it just knoww it exists

Xppen magic notepad is an excellent economical option and allows you to take notes without any problem, it is made for that. Its screen modes do help your eyesight and its matte screen reduces glare
