Pack sizes are deceiving. Some packs are tall and narrow and look huge while others are shorter and look smaller even tho they are technically the same liter size. Plus it depends on the person. And the time of year you'll be walking the Camino. I'm 6'4" tall & 230lbs and a 50L pack looks like a 30L

I love my Stratos 34. I got it for a multi-day trekking trip staying in inns that provided bedding. It was great! I don't know how much the huts you're thinking of provide but if you just need to get yourself, maybe a little extra clothing, some toiletries and whatnot, and food and water for the day

Does your existing setup annoy you? There's your answer. I find it worthwhile to have a hiking pack I really like. Since you're road tripping - is space in your car an issue? My Osprey Stratos 34 is my favorite for non-technical day hiking. Given your max length, it actually might be the right size

I use an Osprey stratos 34 liter. No brain, long zip to open like 2/3 of the pack. No significant digging needed. Now, you said you don't want tips on packing / organizing... But why are you digging in your pack? I've done several Camino and have opened my pack on trail maybe once. Hip belt pockets

34-38L is what I've seen the most out here. Don't go bigger than that. (I'm on day 24 out of 28 days so far and I've got a 34L, with some room to spare). Bag: Osprey Stratos 34. EXTREMELY well made I'm so impressed. Shoes: light and fluffy. Hoka Speedgoats for me. Half a size bigger than normal.

I love my Osprey Stratos 34. It's a bit big in the summer but when I start getting into layers and maybe microspikes it's perfect. Definitely try it on though: some people find them too narrow. It's not just about volume. Again, especially when layers and any metallic gear get into the picture, a go

Love my Osprey Stratos 34. Even my Osprey Syncro 20 has a trampoline back. The usual ridged foam approach is better than nothing but I don't think it works very well. There's no airflow to take your sweat away. Yes, the wire required for a trampoline back to work makes a stiffer, heavier backpack. I

I was able to bring my Osprey Stratos 34 as a carryon and they didn’t even ask. It was definitely over the limit in height but it fit easily into even the smaller airplane I took for a connection, you should be fine.
