I’m only 6’2” and I’d definitely recommend a pack larger than 36 L, reason being that rainwear in our sizes is bulky. The length of trips (and amount of food needed) is also a factor. Some tall guys need a lot of calories. Getting a pack that fits is also extremely important. Try them on in a store

Ultralight vs Sustainability
A slightly different, though related perspective: My main backpack is a Mystery Ranch Bridger 55. I imagine it might last me the rest of my life. It's also super comfortable. Yes, I move slower, cover less ground. I'm good with all this.
