Which HE keyboard to choose?
I just got the Lemokey P1 HE, it checked all the boxes I wanted in a keyboard. Wireless and wired, metal frame, north facing RGB, 75% layout. Whats the best value magnetic keyboard
I have both the Monsgeek M1 V5 HE and the Lemokey P1 HE and I was in the exact same thought process as you about not paying the wooting type price points. I got two keyboards for a little more than the price of the Wooting 80 HE with a metal frame. Much better. The astrolink switches on the Monsgeek

both the lemokey P1 HE and Monsgeek M1 V5 TMR is gonna be the more trusted brands, both have good software, and good build quality, the only thing i say thats gonna be the deal breaker is the Monsgeek M1 v5 tmr can use both TMR switches and Regular switches at the same time

I'm too picky and can't find a keyboard for my taste and budget

Are you familiar with the Crush 80, Rainy 75, Lemokey P1 HE? All are at a similar price point, hot swappable, full aluminum cases and use VIA. Worth checking out, especially with the Black Friday sales going on.

Keychron Q1 HE or Moonsgeek M1 V5 TMR
I don't have the Q1HE but I have the Q6HE, the Q3HE, 2 x Lemokey P1 HE and the M1 V5 TMR. Here's my take.
