First Stereo/speaker Setup, help!
If it has to be Apple Music consider the Eversolo Play and spend the rest on speakers. I'd even consider getting the original model Klipsch Sevens for $800 on Amazon. Your proposed system seems overly fussy even for an audiophile.

Bookshelf speakers for vinyl listening?
I really love my KEFs (R3 now, Q100 before) BUT you mentioned that you have a huge room and as much as I love those small bookshelf speakers, I probably would go for something a little bigger to have more power behind them! Why would a streamer DAC amplifier last longer than powered speakers? I guess it is less costly to replace a Wiim than powered speakers. The Klipsch Sevens are fantastic, but I've just read too many stories about them all of a sudden just not working anymore, and even while under warranty, Klipsch support is slow to resolve the issue (sending out a new plate amp), because half the time, they don't have any ;-(
