I use a 65L Gregory Baltoro for backpacking with a hammock. It has enough space for longer trips, cold weather, and times where I need to carry a bear can for my food. Honestly though, if all you are doing is car camping and you aren't at all concerned about weight, basically any large pack will do.

Read the link I gave you. It clearly explains the advantage of a carry-on sized travel backpack (about 40L) for urban/semi-urban travel via hostels/guesthouses/etc. The Gregory Baltoro 65 mentioned elsewhere is a fantastic off-the-grid wilderness backpack which is another situation entirely.
