Don’t need to pause on advanced watches. With my Fenix 7, when in Ultra Run mode, if I physically stop it will assume I’m at an aid station and start counting that as non-moving time.

No, that's just a problem with Suunto watches. But with any watch, if you want accurate data, you need a chest strap or arm band HRM. I didn't even know that Garmin released a F7 Pro without wifi. Looked it up and yep, they did. Aparently it was built for secure, restricted environments. I would honestly be taking it back and getting a full featured F7 Pro with wifi enabled
