Series 11 compared to Series 7

The S12 (like the S9, and S6 before it) will come with a genuinely new chip. Apple's on a 3 year cadence with the Series watches. If you want one that's 'future proofed', the S12 will be it. S13 will have a redesign (much like the S10 and S7) S14 (like the S11 and S8) will be pointless.
