iPadOS 26 is the worst update ever!
I also have an 2020 11 inch iPad Pro and my thoughts mirror yours exactly. My ipad Pro was my favorite piece of tech ever (to be fair it still is) but holy shit has iPadOS 26 absolutely tried its hardest to ruin the experience. Literally everything is buggy and clunky.
