If you don’t want to spend to much, I suggest the iPad Air it’s lightweight and powerful since it runs on MacBook chips with the latest one running on M4 so definitely suited to you for digital art. I currently use the 2022 one with M1 chip and it’s really good.

just be aware it takes 3 days to fully migrate over to ios26 from 18 , 3 days of background updates then re indexing, just reboot every day, you might want to keep it on home wifi and on charge if possible , just occasionally check device isn’t overheating, try avoiding gaming or anything intensive

Which Ipad would suit me the best?

An iPad Air 5th Gen 5 (M1) used seems like a good fit for you. The M1 would make video editing faster, and it has the Apple Pencil 2, without being as expensive as a iPad Pro. Base iPads require plugging in the Pencil 1 to the Lightning port. The iPad Air also has USB C (older base iPads don't).
