Looking for iPad for drawing
Maybe get a used last model Air that has 256gb storage. Really any of the M series chips is enough. That default 128gb gets pretty full when you start adding apps for art. If you have the money for new the M4 Air gets 12gb of RAM which will make it feel more responsive longer. I'm still on an M1 Air

Is the mini 7 worth forking out the extra cash over the A16?
I think the big thing you wanna think about is longevity, better chip will get you more years out of it. A16 is an aging chip and doesn’t even support Apple Intelligence. A mini could be fine if you can find one at a decent price, but I wouldn’t do anything other than the A17 Pro. Hell even an M1 iP

Bending issues
I personally haven’t and I’ve had a 2018 11 inch pro, a m1 iPad Air and a m5 pro 11 and all of them haven’t bent and all three of them are the super thin iPads. I think you just have to be careful
