It happened with my Apple Watch SE (which is way less powerful in terms of CPU than your Ultra) but every time I was done swimming, I needed to wait 3-5 seconds before finishing the session on the watch to let it register the last 25m (European here). So maybe it’s just that 🤷🏻‍♂️
