Still confused about what type of monitor to get.

Definitely get nothing less than 4K monitors. I now use a Dell 27" U2723QE and a LG 27UP850K-W as a secondary monitor and it works really well with my M2 Max Mac Studio. RTX 5080, a 1440p or 4k Monitor?

Buy the 4k monitor. I’ve got a 5080 also and paired it with a PG27UCDM from Asus. The thing looks beautiful and the 5080 is plenty of power. Also, DLSS looks MUCH better when running at higher resolutions. I think it produces and beautiful image and it’s much better than native with TAA.
