Swapping out Fusion Drive HDD for SSD
Yes, you can do that. But usually, the SSD part of a (former) fusion drive is way too small for that to make sense (32 to 128GB). These sizes might be enough for the system to run but you have to remember the system needs space for cache and stuff. My suggestion: Would be better you buy an SSD like

You're talking about a drive for storage. If your motherboard will support it, you should get an NVMe SSD. These are much faster than the older drives. The Samsung 970 Evo Plus and the WD SN770 are both good models. If your computer is a little older, you should get a SATA SSD like the Crucial MX500

You're paying extra for RAM and SSD. You should buy 32 gigs of DDR5-6000 CL30 RAM for ~$110 and a 1TB PCIe 4.0 SSD (like the WD Black SN770 or similar) for ~$70.
